    I am making this recipe tonight for dinner and it will be the second time I'm making it. My daughter doesn't like runny egg yokes so I slightly scrambled hers the first time hoping the egg yolk would cook fully while mine didn't. Unfortunately that wasn't the case. This time I am going to fully scramble her egg before putting it in the cup. I found that the beans needed more flavor like salt or something so this time I am going to try chili beans (without meat. We ended up adding a LOT more salsa when we ate the egg 'pie' last time so will be doing that again this time. Other than that, this was a really good and easy dinner for the two of us, and easy to adjust to just two diners, unlike other recipes can be. Yum!!!

    First recipe that I have tried from you and I really enjoyed this for my lunch today! Very easy to make and filling. I did have to cook it a little longer than stated, but that is my oven temp. everyone's vary, but the dish turned out great, thanks

    Very cool, easy and cheap! The presentation was impressive as well. I was scared by the reviews that said they came out underdone, but iI overcorrected and the eggs came out over hard, which wasn't my intention. I'd recommend following the recipe exactly and if you want the eggs more done just pop them in the microwave for an additional 15-30 seconds. That way your guests can have them done according to their individual tastes. Will definitely make again!

    They do turn out well, but you do have to cook them a lot longer than indicated. Here are a few helpful hints (mine and other posters here:
    1. I could not be bothered by cutting my tortillas down to size. They were 7-inch, and were fine.
    2. As mentioned here, be sure to microwave your tortillas (~45 sec between two damp paper towels before brushing on the butter and molding. They will be more pliable (and less likely to break.
    3. Use non-stick cooking spray on muffin tin. I also lined my tin with paper cups for easy removal. (The bottom part of the tortilla won't get as crisp as the top part. It didn't bother me, though.
    4. After 8 minutes of baking, I took out the muffin tin and covered with Al foil (without adding the cheese. I cooked the shells for 18 minutes, took out, put cheese on, recover the pan with foil, and baked for 4 minutes longer.

    This is a knock out! I used jumbo eggs and a XL muffin tin. I cut out my tortillas accordingly and they made a nice big "bowl" for the indgredients. I did not adjust cooking time, but i threw them in the mirowave after baking for 45 seconds and had perfectly done eggs. Next time I will just bake a bit longer. I am already thinking of variations like using whole wheat tortillas next time, and maybe even egg whites to make it super healthy. However it really isnt that unhealthy as written. This recipe is a total keeper!!
