Thank you Melissa for yet another winner. This is such a beautiful dish and yummy too. I love how simple it was too. I only had large flour tortillas so I cut them in half and adjusted them to fit (make a cup in the muffin tins and still they turned out beautifully!

This recipe is a home run! Not to mention beautiful!! I, too, followed other reviewers' advice about liberally buttering the muffin pan and tortillas for easier removal. As also recommended, the advice about waiting until the eggs are set was spot-on. (To help facilitate quicker cooking, I left my eggs out on the counter while I was getting everything else ready - including the cornbread - to come to room temperature. I also used regular salsa as some people absolutely HATE cilantro. I served the finished product with a garnish/ side of Bobby Flay's Cinnamon Oranges . . . and my brunch guests called me "Picasso"! Thanks Melissa!!!

Delicious!!!!!! I cut the recipe in half, serving to 3 people. Instead of using pepper jack cheese, I used mexican mixed cheese, add green chiles to the bean mixture and hot sauce to give a lttle heat to the beans. The recipe was very easy to prepare. Instead of serving the corn cake that was advertised on the show, I served portato mash (which I created to make a complete meal.
This is my first time doing this dish, and it came out the the way the cook describe it. I will do it again. It's part of my breakfast memu for the weekend. Delicious!!!!!

I've made this 3 times and it is delicious! Great leftover.
The last time I made it I put some cheese in with the beans & salsa and
I think it tasted even better than the first 2 times.

To avoid raw or overcooked eggs, follow the times specified, but after baking final time pull out of the oven and recover with foil and let rest for about 5 min., they should be perfect! I've made this recipe several times now and that was the trick! Oh, and yes yes yes heat those tortillas up in the microwave first for a short time, saves some bad words from slipping out of your mouth and scaring your guests! Also pico de gallo is better than salsa!

I was a little disappointed with the flavor of this recipe. Also the egg didn't set-up or cook very well and we ended up putting them back in for longer than the recipe suggested for cooking time. Also be sure to use lots of oil or butter on the muffin tins because I thought I had them lubed up pretty well and they still stuck so much they ended up breaking when we tried getting them out.

Delicious and easy! Made 4 with a whole egg and the other 4 I poked with a fork and scrambled a little in the tortilla before baking and scrambled again before sprinkling the cheese (for the kids.. Did take a few more minutes to bake than stated in recipe and be sure to spray your pan. Served with avocado, salsa, cilantro. Next time I will try it with chorizo and maybe some sautéed veggies.

Liked this recipe a lot HOWEVER make sure if you use egg beaters instead of eggs you allow for a much longer cooking time. I think I cooked this 45minutes to 1 hour before the egg beaters set. Not sure what the difference is but it took a very long time. Luckily the tortillas didn't burn. LOVE the idea of heating the tortillas first to soften them up.
