This was easy and low priced. My family loved it. I began thinking of ways to vary it as well (maybe add crumbled bacon or chopped ham. I had to cook a little longer than recipe called for and over did it a little. Avoid this so your cups are not dried out. I had some hash browns on the side and this was a great meal. We ate for dinner actually but would be good at any time of day.

This is a great recipe! I made it this morning before school so you know it was easy. I used scrambled eggs mixed with a bit of milk and leftover ham along with the cheese. It took 20 minutes to set. I used the foil part way through and had no burning of the tortillas. The little cups popped right out of the sprayed muffin tin. I made the original version for my husband. Everyone was happy. A fun way to start the day. Looks fancy but couldn't have been easier. So great that you can change ingredients but still have a good result. I will make this again for sure.

This was a yummy recipe. However, they didn't look very pretty once I took them out of the pan. Flavors were great, though!

I STRONGLY recommend cooking 1 cup without the cheese so you can see if it's done enough for you. I cooked mine as directed in the recipe but counldn't see until I dug in that they were still raw. I wound up putting them back in the oven and in the end I had to double the cook. They were good, though.

Loved this recipe! I watched the show at 7AM and thought it would a great way to start a Sunday. My son is gluten-free so I used corn tortillas, which I heated on a flat pan before put in the muffin tin. I also found I did not have any beans, but had a pound of ground pork. So I sauted with onions, peppers then added sweet hungarian paprika, cumin, mexican oregano, cumin and a pinch of all spice.

These were delicious. After reading the reviews, I went a bit overboard and overcooked the eggs, but it was still delicious. (I think I did 16 minutes, then another 4-6 minutes after adding the cheese. I sprayed the pan well with cooking spray, and had no problem getting the cups out. Very nice with the cornbread, and broiled grapefruit. I'll definitely be making these again.

Looks great. Easy recipe. Added about a tablespoon of cooked spicy breakfast sausage under the egg. Tasty addition. However, next time I cook I will not put the cheese on the eggs until I can see the egg is cooked enough. It is hard to see if the whites are congealed underneath the melted cheese.

I made these for my family on Sunday for brunch. They all loved them and said it was really tasty. My son who is in the Army said they should make these on base. But it does take a little longer then the time you said. But that's OK. Will definetly makes these again.
