    Absolutley delicious! Hubby and I had this for dinner. I have an electric stove so I did not have to cover it with foil the last few minutes. I love your show and all the little tips to save a buck.

    Very tasty! My little ones loved it too! I have pretty hearty eaters in my family! My 3 year old exclaimed, "Yum, black beans! My favorite," when she reached the bottom of the tortilla cup.

    This was tasty and easy to make. I'd spray the muffin pan with Pam or oil it a little so there isn't any sticking! (Mine stuck some. The eggs do need to cook a little longer as well. Looking forward to making it for guests!

    my hubby and i loved it but realized that the eggs needed to cook about 5 min longer than the recipe called for but over all it was a hit and i will be using this recipe again!!!

    Delicious! Substituted refried beans for the black beans and used salsa verde. Definitely needs more cook time though. For the white to set enough, about 12 minutes before adding cheese and 10-12 after. Very filling...one per person is more than enough. Thanks Melissa!

    It looked beautiful and was easy to make. I overcooked mine though. My oven usually takes longer than most. Since I'm worried about underdone eggs, I overdid it! but even overcooked eggs with a hard yolk, it was still wonderful! It will become part of my weekly rotation....I'll work on the perfect timing.

    I am a California transplant in Vermont and I miss mexican food everyday. This recipe was easy and so good! Portion size is perfect, flavorful and great! I cooked mine about 2 extra minutes after adding the cheese. I also blended half of my black beans and mixed them with the remaining whole black beans. YUM!

    Help. I was wondering about the black beans. I bought some dried black beans. Now do I cook them til they are done and then freeze them? Do I thaw completely before using? Will they get mushy?
