Ingredients
  • 1 head kale, stems removed and thinly sliced
  • 1 large carrot, grated
  • 1/2 an orange, juiced
  • 1/2 a lemon, juiced
  • Salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • 1/2 red onion, sliced very thinly
  • 1 slice bacon, cooked crisp and chopped
  • 1 rounded tablespoon mayonnaise
Directions

Place the kale into a salad bowl. Toss with the carrot, orange juice, lemon juice ,and salt, and using your hands, rub the acid into the kale. Let the kale sit a few minutes while you shock the onion. Prepare a large bowl of ice water and a saucepan with boiling water. Place the thinly sliced onion into the boiling water for 15 to 30 seconds, and then shock them in the cold water, stopping the cooking immediately. Drain the water and blot the onions with a paper towel. Add the onion, bacon, olive oil, salt and pepper and toss well. Add the mayonnaise and mix the slaw well. Refrigerate until ready to serve. Can be made several hours in advance.

This was really good. I had to change a few things due to ingredients on hand....I substituted the citrus for pomegranate seeds and some of the juice from the pomegranate and added some pine nuts. I didn't feel like making any bacon so excluded that. I served with fresh grilled tuna inside corn tortillas topped with the kale slaw. We all loved it. item not reviewed by moderator and published
This was good. And I'd like to thank past reviewers, especially the one who said they added pine nuts. I made the recipe and tried it as written (except 2 pieces of bacon vs one. It had a VERY raw kale taste. I kept looking at reviews b/c everyone seemed to love it. It was just ok. I LOVE kale, grow it in my garden and cook it all the time so I was bummed I didn't like it as much as everyone else. Delicious recipe for kale! I have made this numerous times and everyone raves, even those who didn't think they would like kale! Most of the time I am too lazy to quick cook the onion because I love them raw. Otherwise, I follow the recipe. I LOVED this! I did not add the bacon (my husband is vegetarian, or the carrot (I was being a little lazy....figured it was more for color than taste. However, followed the rest of the recipe very closely. Used meyer lemon juice with the orange. The tip on quick cooking the onion was fantastic! I can't believe, as much as I cook, I didn't know that tip! They were still crunchy and tasty, but that overwhelming onion taste was gone. I seriously could have eaten this entire dish myself. I got a CSA this year for the first time and I received Kale and did not know what to do with it, so I found this recipe. OMG this awesome. My family requests this from me all of the time. I omitted the carrots but other than that I followed it to the letter. I also don't add the bacon until it is time to serve. I will be making this dish for a long time for my family. I am new to Kale so this was a great introduction. I left out the oil and mayo. I use the juice and zest of a whole orange and lemon, goat cheese in place of mayo, dried cranberries, blueberries and/or raspberries, toasted walnuts, pecans and/or slivered almonds, red peppers, carrots, sweet onion, granny smith apple, sugar snap peas. This is delicious even without the bacon (which I never eat, so I did not use. This recipe was featured on yesterday's show in which she explained that she uses the lemon and orange in place of a meyer lemon which is more expensive. Oh My Goodness! This is absolutely delicious!!! Please make it. Sooo healthy too! I listened to the advice from other reviewers and would put the bacon in per bowl (1 slice per bowl instead of mixing it in with the salad to avoid it become soggy. As I use microwaveable bacon,,it only takes a few seconds to make and is really easy this way. I also put in halved cherry tomatoes (about 3 per bowl along with bacon and it was awesome. I used the mayo and I'm not a gigantic mayo fan and it really worked so I do recommend following the recipe exactly as it is with the above tips. Enjoy!!! I used a home made mayo and skipped the bacon and carrots and added some minced garlic. Excellent! I had just bought a bag of kale which I was going to cook, but saw your program and decided to make this slaw in stead. We ATE THE WHOLE BAG! It was so good. I left out the bacon and added 1.5 tsp raw sugar to the olive oil/mayo, as well as zest from the orange & lemon. I also used chopped green onions, just to save a little time. This is really great. I changed it slightly to make it a bit healthier and also due to what items I already had on hand. I had lime instead of lemon. Since I only had 1/2 head kale, I followed the recipe and after rubbing the kale added chopped fresh spinach and tossed together. If you want a healthier slaw/salad you can use a few sprinkles of smoked paprika instead of bacon, which is what I did. I didn't add the mayo and I didn't miss it. I made it more like a salad. Sensational! The ingredients pair so well together and every bite is crisp and delicious. It's a bit time-consuming to put together, but as Melissa said, the slaw can be prepared (without the bacon several hours in advance and refrigerated. Before the meal, toss in the bacon and serve. Leftovers are just as good the next day, as all of the ingredients (save the cold bacon hold up well. One word...PHENOMINAL!!! I was leary of this as kale is not a veggie you typically find raw like this, but Melissa is right on...the acid from the lemon and orange really soften it but leave it crispy. My whole family LOVED it. I did add a little more mayo but that's more because a "head of kale" might be different for different stores and the like. I like my slaw a bit more on the tangy than sweet side, so for my serving I added a teensy splash of white wine vinegar. The boys, however, loved it just the way it was. And the onions were PERFECT!
