    I used a home made mayo and skipped the bacon and carrots and added some minced garlic. I thought it turned out verry light, sweet, fresh and over all verry tastey the orange is a wonderful compliment to the kale (oh, which I did have oriental flowering kale and regulare green kale - made a nice colorful presentation

    tasty. The whole family liked it. I added some toasted pine nuts which added another layer of flavor to it that we all liked. They said they want me to make it again so it is a keeper.

    I absolutely loved this recipe and I have never liked slaw, but the kale put a different twist on it. I actually like it better without the mayo, so this is how I make it. Will make this over and over as a great way to get vegetables in.

    Excellent! I had just bought a bag of kale which I was going to cook, but saw your program and decided to make this slaw in stead. We ATE THE WHOLE BAG! It was so good. I left out the bacon and added 1.5 tsp raw sugar to the olive oil/mayo, as well as zest from the orange & lemon. I also used chopped green onions, just to save a little time. I will definitely make this again. Thank you for your economically creative approach to cooking. It is an inspiration!

    This is really great. I changed it slightly to make it a bit healthier and also due to what items I already had on hand. I had lime instead of lemon. Since I only had 1/2 head kale, I followed the recipe and after rubbing the kale added chopped fresh spinach and tossed together. If you want a healthier slaw/salad you can use a few sprinkles of smoked paprika instead of bacon, which is what I did. I didn't add the mayo and I didn't miss it. I made it more like a salad. All in all, this is really yummy!

    Sensational! The ingredients pair so well together and every bite is crisp and delicious. It's a bit time-consuming to put together, but as Melissa said, the slaw can be prepared (without the bacon several hours in advance and refrigerated. Before the meal, toss in the bacon and serve. Leftovers are just as good the next day, as all of the ingredients (save the cold bacon hold up well. If you have a lot of leftovers, you might want to pick out the bacon bits and microwave them a few seconds to recrisp. Another excellent recipe, Melissa!
