After seeing the show I realized I had pretty much everything except the parsley and that the shrimp I had were frozen, Contessa brand. Also I used penne pasta instead of linguini. Regardless it looked so good that I decided to cook anyway! The Contessa shrimp were gret because they were already deveined but they still had there tail shells for me to use when making the stock. Since I didnt have as many shells I added a little old bay to the stock as well. Also rather than straining the stock when it was ready, I ladelled out what I needed which for me saved a step ( I ladeled out the pasta water as well.

The dish turned out excellent and even my husband ate it and he is super super picky. The only thing I think I will do different next time is to put a little less red pepper and I will probably make more of the scampi sauce just because we love sauce!

    Great dish! Tasted VERY good!

My husband doesn't like fish or shellfish of any type :-( - so I made this with chicken and it was sooo good (I hate pasta but this made pasta enjoyable. My husband and grown son loved it and even my five year old said "yum". Next time I'll do it a little differently - I'll dredge the chicken bites in a little flour and forego the marinading - and use the marinade mix to make the sauce. It is a keeper. I love this show (I hate the reality shows so I didn't follow Melissa there - but this show and Brian Botiano's show make me excited to watch Food Network on Sunday again.

Easy, delicious and affordable. I added broccoli to mine to help soak up all the yummy sauce.

I saw this recipe today and was inspired to try it. I did spend over $10, but did not mind. (olive oil is not cheap
I enjoyed the spicy kick of the red pepper flakes, plus it was fun to make my own stock. Never did that before:- I actually added the 1st lemon into the stock for an extra lemon touch. Good simple recipe! Enjoy

Was it my imagination or did Melissa put the lemon into the hand juicer upside down? It should go in so that the skin coutours with the curvey walls of the juicer, right? She sure seemed to struggle with it and mine works much easier my way.

Also, I think you can use used marinades for sauces, etc., if you bring them to a boil first, although I'd only do it if I were re-using incorporating the marinade into the same meal.

I watched Melissa this afternoon and made this for dinner along with the Broccoli parmesan. My family ate it all. Very flavorful and just the right amount of food.
Will definitely make this again. A new family favorite.
