Made this for supper and it was yummy. I didn't have green onions, so I just chopped up a yellow onion and threw that in there and also used fresh garlic (three gloves instead of garlic powder. I didn't have cilantro either.
But this was good and I will definitely make again, but will make a lot extra next time. I even doubled the green lentils this time but still didn't seem to make very much. Definitely wouldn't make enough for a large group of people. I was able to eat the whole thing myself but that's probably because I had it by itself. As a side dish I can see it making maybe four servings, but I was having it alone as a meal.

I just made this and it is delicious. I added a few chopped grape tomatoes because I had some that I needed to use. Also added a few red pepper flakes. I am starting a gluten free diet and this was a great start for me.

I made this last night for the first time. We loved it! I served it warm, but definitely see how you can serve it at any temp and how you can add to it. I'm so excited that I have a "go to" healthy side that is so versatile. This is definitely a keeper!

This is fabulous as is - warm, room temp or chilled. But it is also a great base to add whatever you love best. If chilled, I would add some diced red pepper and cucumber. Be sure to check your salt and pepper because you want to have enough to bring out all the other flavors without over powering them. I am passing this on to my vegetarian, college daughter...full of protein and not expensive.

Great healthy side for dinner and then enough protein for lunch the next day if you have it for leftovers!! I use less oil because I think the lime, red wine vinegar and dijon give it enough flavor. Enjoy!

This was blah. I was excited to make it and was disappointed. I made it as specified and added in fresh garlic, jalapenos and chopped orange pepper to make it a little better. Its eatable, but definitely not a keeper. I don't want to throw it out so i'll eat it. Probably with a few squirts of siracha on it. That makes everything better!
