The dressing is fabulous. I added a chopped red bell pepper, used a vidallia onion instead of green onion, and added fresh chopped mint and parsley. Yummy.

I have wanted to try a Quinoa recipe and not throw it out. Quinoa & Lentils!!! Probably the healthiest combo ever. I have not yet chilled the end product, but I love it!!!!!!
Can't wait to taste chilled. Could be enhanced with many ingredients, but if you use quality fresh goods (Lime especially and really watch you cooking time on the lentils & quinoa and drain extra water....You have a GREAT DISH!

This is my new favorite! I like putting a few spoons of this on a bed of spinach and it is filling. I like the taste of cilantro so I use extra.

    This was delicious! Two hints:
1/Let it sit at least overnight and the flavors really come through. 2/Add raisins or cranberries for a hint of sweetness, it makes all the difference.

I agree with buying "Trader Joes" pre-cooked lentils YUM. I also lighten up on the oil I use less then the called for 1/4 cup its a bit too much for me and I use grape seed oil. Since the recipe calls for 1/2 cup uncooked quinoa which when cooked is 2 cups and a 1/2 cup of dried lentils will make 1 cup cooked I just go ahead and add 2 cups of pre-cooked Trader Joes lentils and add all the rest of the ingredients which is the dressing part. Its my favorite salad right now Yummy!!!! This salad is very good you really don't have to change the original recipe its so good.

    OMG!!! How delicious???

    2 must-do shortcuts:

    1. Buy pre-cooked lentils at Trader Joes (in fresh vegie section

    2. Buy pre-risned quinoa (Ralphs...not sure if TJ's sells this

From my 9 year old to our college girl to us 50-something old folks, eveyone LOVED this. Healthy, super tasty and easy!!

    A HUGE repeat!

Wow, utterly fantastic! I had some quinoa in my pantry for a while and wanted to use it. Made this recipe and was not disappointed. The mustard and lime are great in it. I used green lentils. Might be grazing on this one all summer....
