This salad is delicious! I have made it many times and have passed the recipe to others. I can't imagine leaving out the lime because to me that is what makes the salad taste so fresh. It is even better after it chills overnight in the fridge. I did cut back on the scallions and omitted the cilantro because I am not a fan of it. Excellent!

I just made this on a whim because I'm a vegetarian looking for protein alternatives (and that superfood quinoa! and it came out so good!! It's not PRETTY to look at but who cares when it tastes so yummy! I used lemon zest instead of lime but I'm sure it was just as good as lime would be! Keeper!

I've never cooked with quinoa, much less eaten it. In searching for a healthy non-meat protein, I found this recipe. This recipe is fantastic! Allowing it to sit in the fridge for several hours before eating made it even better. The only changes I made were using olive oil instead of vegetable and I used lemon zest instead of lime. Thanks for the great recipe, Melissa!

This is a great recipe that needs no adjustments. I double the recipe every time I make it and it's great hot or cold.

Wow. The taste of this recipe is so unique and SO healthy! I also added some thinly chopped asparagus and a few more green onions just to pump up the flavor. Delicious.

Absolutely wonderful recipe! I was trying to find a recipe using lentils that wasn't a soup or stew. This was the winner, and I'm happy I found it! The flavors are great. The salad is great warm (you don't have to cool the lentils or quinoa before serving and also great cold. I served it slightly warm over fresh baby spinach! I love and have cooked with quinoa before, but it is pretty flavorless. So, the vinaigrette (and many of Melissa's other vinaigrettes I've made are wonderful, easy and flavorful! The whole recipe was easy and delicious! A new favorite!
