    These 'cupcakes' were very expensive to make and though they looked great, they tasted like yard clippings!

    These were okay. I bought the ingredients. First time is expensive.
    The muffins were okay. Moist, flavorful. I would have rated higher if nutritional info was listed. As for "hiding veggies" in food...my 82 year old mom was doing it and her mom before her. It is a trick most mom's either figure out or hear from the mommyhood grapevine.

    I have to say there are a lot of close-minded people on here! I keep most of these ingredients on hand (substituted a bit of soy milk for the soy flour because I love making healthy muffins for my children for snacks. I also love adding crushed nuts, applesauce, diced apple, dried apricot or cranberries to muffins like these. Those that criticize these as being tasteless are probably the same people that think feeding Fruit Loops to their children is healthy because they contain "real fruit juice." To those people: add a 1/4 cup of honey (or agave nectar--which you probably don't have on hand to these and you will like them. No wonder there are so many overweight children in this country. A nutrition course should be required in our elementary schools and perhaps for parents-to-be as well. As for cost, I prefer to cut out soda (never sees it's way into this house chips, cookies and prepared foods and dedicate that savings to healthy ingredients. Your health is worth it!

    Delicious,moist full of good stuff.I had everything on hand except the flax seed;went to health food store,got some ground my own,a good and new experience.I used whole wheat pastry flour,lowfat milk,real bran flakes,shreeded carrot and granny smith apples.I look forward to having some in the morning.They are smaller than I thought.Did not make what recipe said.I am going to make a mix up and just add fresh ing.and flax.this way it will be faster to whip a batch up.Don't see how anyones were dry.Maybe the oats and bran cereal did it.Try them with my adjustments::they are good.I might even add walnuts next time.

    The only reason why I give this one star is, if you notice right from the begining Malissa took her ideas of "hiding" veggies in food straight from Jerry Sienfeld's wife's cookbook! Even on the competition, when she pureed brussel sprouts,& Bobby Flay was so wowed, it was right out her cookbook! Amazing Food Network hasn't seen it yet, oh well! For those who like this recipe I reccomened getting the original author's cookbook!

    I had all the ingredients on hand and made a quadruple batch that was gobbled up so fast I only got a quarter of it in the freezer instead of 3/4 as I'd planned. LOL We eat very healthfully but I'm always looking for new ways to get more veggies into our diet. My guy is always looking for more ways to get sweet, tasty foods on the menu. To complicate things even more he has to eat GF so I do a lot of baking. This yummy recipe meets all those goals. It yields a carrot-cake like pastry with good keeping quality. It's nutritious enough for breakfast or lunch on the go, but with a little cream cheese frosting can be festive enough for a party. To make it GF I subbed a high-protein flour mix for AP; GF oats for bran cereal; Rice bran for wheat germ; Sorghum flour for whole wheat; and 1% soured milk for whole. I added extra spices; more extract; a little Expandex, some toasted almond meal and 2 tbsp applesauce per recipe. I baked some in mini muffin, muffin and mini loaf pans. The loaves held moisture the best & minis were the driest, but all were fairly moist. The oats & bran were pre-soaked for 30 min in the warmed milk w/ a little honey. Like many other I want nutrition info with my recipes. Food Network please get with the program!

    I would try this recipe because I have some dietary issues and this would be a nice change from the breakfasts/snacks I usually eat. If only the nutritional values were listed, I'd be all set. I don't like the fact that 1 tablespoon of soy flour is needed. Does anyone know how expensive that is? And to have to use it only once? I always have flax seeds in the house and you can buy wheat germ in bulk at Whole Foods if anyone has them in their areas, or anywhere where grains/beans are sold in bulk.

    I also have to agree with most of you that Jeffrey should have been given the Food Star award instead of Melissa. She really doesn't bring anything to the table, and is rather boring. She is the second Food Network Star winner that was wrongly chosen. The last one was Amy (can't remember her last name that did nothing but cry during the entire contest. I think sometimes the judges get caught up in their own silly drama and egos to pick the right person.

    SINCE WE EAT HEALTHY AT OUR HOUSE WE HAVE THE INGREDIENTS ON HAND. I ADD A LITTLE FLAX SEE INTO EVERYTHING AND SOY IS GREAT FOR WOMAN, ESPECIALLY FOR MENOPAUSE! I USED A LITTLE SOY MILK INSTEAD OF THE SOY FLOUR AND IT MADE THESE A LITTLE MOISTER. THESE REALLY ARE NOT CUPCAKES, BUT MORE LIKE BRAN PLUS MUFFINS THAT ARE GREAT FOR A QUICK BREAKFAST. IF YOU ARE SOMEONE WHO LIKES EVERYTHING TO BE REALLY SWEET AND FLAKEY OR DON'T LIKE BRAN TYPE MUFFINS YOU WON'T LIKE THESE EITHER. THESE ARE HEALTHY MUFFINS, NOT SWEET MUFFINS. I WOULDN'T USE THE SPINACH, BUT CARROTS OR ZUCCHINI PLUS FRUIT ARE GREAT! JUST LEARN TO MIX AND MATCH FOR THE BEST FLAVOR! I USED APPLESAUSE INSTEAD OF THE OLIVE OIL (DON'T LIKE TO USE IN BAKED GOODS, AS SEEMS TO GIVE A DIFFERENT FLAVOR. AND APPLESAUCE MAKES A GREAT OIL SUBSTITUTE! I ADDED PECANS TOO AND THAT MADE THESE COMPLETE! I DON'T KNOW WHY PEOPLE TRY RECIPES THEY KNOW THEY WON'T LIKE CAUSE THEY DON'T NORMALLY EAT THAT WAY AND THEN CRITICIZE THEM! THESE ARE GREAT FOR THOSE OF US WHO EAT HEALTHY REGULARLY AND FOR THOSE WILLING TO TRY! MY DIABETIC HUSBAND LOVES THEM.............ALTHOUGH HAVING THE "HEALTH" INFO WOULD BE NICE SINCE THEY ARE SUPPOSED TO BE HEALTHY, IT'D BE NICE TO KNOW BY HOW MUCH! THANK YOU!
