Thank you for providing a healthy snack idea for my 3 young girls, ages 1, 3 and 4. The ingredient list is not too long, in my opinion, because you are trying to incorporate healthy ingredients! I appreciate your recipes as they provide ideas for my family meal planning, which can become so tiresome after awhile. I DISLIKE THE IDEA OF $10 MEALS!!! Seriously, $10???!!! I was SO disappointed when they came up with that concept-huge let down. I believed in your ability to provide great, realistic recipe suggestions for families, and thus had faith that they would provide that outlet for you to showcase your many tried and true ideas!!! I can't wait for more recipes! Oh, how I wish that they will be healthy, appealing to kids and not limited by such a ridiculous budget!

Laurie, if you don't like the ingredients of a recipe, there's no reason to try to make it (or review it for that matter. There's no reason for Melissa to rewrite the recipe, it's fantastic! Thanks to Melissa for having a truly healthy recipe that tastes great!

I did not have flax seed or soy flour. I used 4 additional eggs and cut the milk down to one tablespoon due to the lack of flax seed. I added an additional table spoon of all purpose flour to substitute for the soy flour. I believe the muffins could use a little more milk and maybe I overcooked them a little.
I will be sharing this recipe with other moms and those with excess zucchini.

Totally disagree with previous review, expect that I love Melissa ? don?t be afraid of long ingredients lists, they are needed for dishes like this! I make something similar for my husband I simply call breakfast muffins and will being trying this recipe this weekend!

I don't eat eggs myself, but I made these and served them to 12 guests I had for my son's birthday party and almost every parent present asked for the recipe. Every kid had at least 1 cupcake, and the adults could only have the leftovers! I should have made more!

These cupcakes are a GREAT idea. I try to get my 2 year old to eat vegetables with no success. These cupcakes taste great and are loaded with vegetables and fruit. I did have the soy flour or flax seed, but everything else I had on hand and they tasted great. I'll be making these again and again.

I stopped reading as soon as I saw the ingredients list, love you Melissa so glad u won next food network star, but please!!!, rewrite this recipe
