The 2 cups of water should be omitted from the ingredients! The proper proportion is 1 part orzo to 2 parts water. I always start orzo on the stove and finish in the oven. Melt 2 tablespoons butter, add 3/4 cup orzo and stir to "toast", add 1-1/2 cups hot chicken broth, place covered in 350 degree oven for 10 minutes, remove cover and cook for another 5-10 minutes until all liquid is absorbed. Give it a stir, then add lemon zest and herb(s. Also fantastic with 2 tablespoons minced shallots sauted in the butter. Perfection!
