    I don't do the cooking in our house, my fiance does the cooking, but I was challenged to cook "the next meal by Melissa" which was the Bird on a Wire episode. These potatoes were part of that dinner. I find the recipe easy to follow and the end result was wonderful. I will definitly cook these again!

    I am a regular roaster of root vegetables so I was a little wary of this at first. They technique worked perfectly. The only change was I seasoned with a "cajun seasoning" to add a little heat.

    I love crispy potatoes, but there is a point where they are too hard on the outside and mush on the inside. This is not the best method I have ever used. The best way is what real chefs do, they par boiling them first then throw in the oven to roast. No need for all that grease.

    I would have like to have seen some special spices besides basic salt and pepper. Who doesn?t know how to fry potatoes? Where is the unique part of the recipe?

    I make these often, but haven't tried steaming first. I will try it this way next time. If your budget can take it, add a chopped shallot the last 4- 5 min. That's what the French do. Delicious.

    Thank you for this method for getting perfect potato texture. I will try it on larger slices, and maybe on parsnips for thanksgiving. My potatoes were not seasoned enough. They needed some Adobo or Cachere's. Next time I might add fresh rosemary to the oven stage.

    I didn't watch Next Food Network Star until the last couple of episodes, but I am loving Melissa and the new show! She cooks like a real home cook and is totally believeable.

    I made this potatoe recipe for dinner tonight (along with the chicken recipe. The potatoes were perfection! The combination of a quick frying, steaming, and baking the potatoes made them so fluffy on the inside and crispy on the outside. Everyone loved the potatoes and I will definitely use this recipe over and over.

    I'm a huge fan of Melissa and I'm so happy that she won The Next Foodnetwork Star. I look forward to trying more of Melissa's recipes.
