    I have mad potatoes this way for years. It was in a heart healthy cookbook. I think they work best in a non stick skillet. They are really good and easy. Few ingredients. Make for breakfast too with eggs great!

    It was surprising that adding a pit of water helped crisp the potatoes. I like almost all Melissa’s easy cooking, and reasonable priced recipes. She’s such a joy to watch with her sunshiny personality. I’m glad she is on the Food Network.

    This is the only way I make fried potatoes now, even steak fries, it's great to pop them in the oven to cook while I grill a steak, times out perfectly.

    I made this for dinner last night, and followed the recipe exactly, except I used a whole cut up chicken. It was super delicious, my entire family loved it! For the first time EVER, my husband asked me to pack him the left overs to take for lunch at work today! He NEVER eats left overs! The chicken had wonderfully crispy skin, and it was tender and juicy. I will make this again soon!

    These potatoes were really good! I didn't get to watch the segment which I regret. Mine didn't come out quite as crispy as Melissa's appear to, but I think that was a combination of me using a tad too much oil and not having vegetable oil I used olive which has such a high smoke point. We all still loved them and will try them again...this time with the right oil! Great!
