I made this for dinner last night, and followed the recipe exactly, except I used a whole cut up chicken. It was super delicious, my entire family loved it! For the first time EVER, my husband asked me to pack him the left overs to take for lunch at work today! He NEVER eats left overs! The chicken had wonderfully crispy skin, and it was tender and juicy. I will make this again soon!

These potatoes were really good! I didn't get to watch the segment which I regret. Mine didn't come out quite as crispy as Melissa's appear to, but I think that was a combination of me using a tad too much oil and not having vegetable oil I used olive which has such a high smoke point. We all still loved them and will try them again...this time with the right oil! Great!

Wow, great potatoes! I am hash brown challenged but these are a great substitute. I make them often. Anxious to try with sweet potatoes.

These potatoes were delish! I followed the recipe exactly and some how they stuck to the bottom of the skillet but that's alright, they were still very tasty and fluffy inside while crispy outside. It's probably my old skillet. I will try a different one next time I make these yummy fluffy potatoes! Since it was just my hubby and I, I used 2 potatoes and it was more than enough. I will probably make these again, they'll be great for breakfast too w some eggs and bacon!

This was a hit with all in my family. We are a total of 8 living at home. Easy and inexpensive, but most of all very very delicious.

I followed the recipe exactly and I also watched the segment on TV - it was easy, tasty, crispy, and my husband (who loves potatoes said this is a winner and he can't wait until I make it again. Thanks Melissa. You and Ina are by far my favorites on Food Network.
