    FIRST THING - Yes, Gruyere cheese is expensive. This recipe only has a little bit in it. Buy the smallest one you can find and use the rest on eggs, big-kid grilled cheese, on some toasted baguettes, grate some on asparagus, etc. The rest of the cheese can upgrade some of your dishes making your money stretch. The recipe really only uses about $2 of cheese give or take a bit.

    Anyway, we loved this. I made it during the weeknight so I used refrigerated pie crusts. I used it the next morning for breakfast with eggs and that was nice too. Everyone picked at it that day too.

    For me, it was way less then $10.00 as I used it in two meals and also snacked here and there on it.

    I'm so excited about this dish because I finally succeeded at a pastry! She makes it so easy to get it right! I did follow the advice of several reviewers and used a full cup of cream, and left some of the thyme leaves in the cream mixture. I also added a little parmigiano regiano and monterey jack to the gruyere, and sprinkled a tiny bit, and a bit of the cream between each layer. It had WONDERFUL flavor and texture, and was beautifully rustic. My mother, who is the most difficult to please diner in the world, just raved, and my children, who don't like potatoes at all, loved it. Seriously, if you want to pass yourself off as a prefessional chef, make this dish! I'm planning to make it for my sister's bridal luncheon.

    Probably would have tasted richer if I used original ingredients but used what I had on hand. Substituted milk and butter for heavy cream, used dry thyme, red potatoes vs russett, mozzerella vs. gruyere. Friends and family still loved it. Any other suggestions to spice it up without breaking the bank? Crust was awesome, by the way:

    My 13 year old daughter and I made it together the 1st time and it was wonderful yet simple. She's re-named it "A slice of heaven"

    Made this yesterday and it was grrrrrrrreat! I did end up using a full cup of cream, and did have to bake it for 70 minutes as I think I didn't slice the potatoes thinly enough. Next time I will use my mandoline! But never mind, it was so tasty! That crust is amazing and so easy ---- I think I'm making homemade pie crusts from now on! Thanks, Melissa!

    First of all it was pretty simple to make - crust and all. Everyone who tried it, loved it; Even after I ate it the smell of someone else eating it made my mouth water. Ok, I did use panchetta instead of bacon but that'swhat I had and that's what I do. When I cooked some and it didn't seem like enough, I cooked more. I also did add a little extra heavy cream as some others recommended. Instead of infusing the cream with the thyme, I just took the tyyme off and added it to the cream. Hey, a little green in the dishwill only help with presentation, right? It was great - no, it was awesome. I gave some to my nephew, my mother, my husband and everyone loved it. A easy, inexpensive killer dish. You go Melissa!!

    This is one of my favorite recipes now! I've never been able to make a decent pie crust but with Melissa's recipe.......s i m p l e !! The crust was so flaky and delicious! I made 2 torte's for company and not one bite was left over!!!

    What a pretty pie! Following Melissa's recipe precisely, the pie crust came out perfectly. This is especially remarkable considering this was my very first pie from scratch. I had to substitute the cheese though, as our local grocery store has limited options, so used sharp cheddar instead.

    This Potato Bacon Torte was a huge hit! My husband made this on a rainy Sunday afternoon and it was perfect! The flavor is rich and it is such comfort food! The whole family loved it. This will also be a prefect dish to make and take to gatherings.
    I can't wait till he makes it again!!
