    Thought this torte was awesome! So easy to make! I did add half a chopped yellow onion, which I'll do again. Great recipe Melissa!

    I too doubled the bacon and used cheese I had on hand, both fresh parm & white cheddar. That made this dish so rich and creamy and awesome! If I had chives on hand, I would have thrown in a little of those as well. I made this on a weeknight so I used Pillbury's Pie Crust which I love instead of making the pie crust so I don't know how the pie crust tastes, but I will try it out the next time I make this dish on a weekend!

    Another great recipe Melissa ... I love the fact that you take simple ingredients and turn them into something fun and delicious. I have tried many things I would never have tried on my own ... thank you also for tips on how to afford the expensive items by shopping for manager specials ... I took your advice on so many of the items and saved a bunch ...

    Hi! Someone asked about making the crust ahead. Absolutely!! I make the crust ahead almost every time, sometimes just hours, sometimes a day or two, or even freeze it for a week or 2. This dish has gotten me more RAVES than any other dish I've made... everytime! I do use a bit more cream and cook it for about an hour and 15 minutes, covering the edges at about 50 minutes.

    My mom and i mad this, we used paula dean's pie dough recipe and regular cheddar cheese instead of the gruyer. When we went to the store to get the cheese it ended up being $10 just for that- so we went a little cheaper. Anyway the torte was so rich and delicious! will be making again and again!

    I have made this before and it came out great. I have one question. Has anyone made the pastry ahead of time? I'd like to get that out of the way tonight and then do the rest tomorrow.

    I made this dish for a potluck lunch and it was an instant hit. I do agree that
    gruyer cheese is a bit on the expensive side so I used swiss cheese instead
    because it has a similar flavor and cost alot less. I also added alittle bit more bacon and alittle less on the thyme because it can over power alittle bit being
    that you use fresh thyme. Over all I would make this once a week for breakfast,
    lunch, or dinner because it is so cheap to make especially if you grow your own
    thyme and make your own crusts.

    I made this for dinner tonight and it was fantastic and so easy. I did use a whole cup of the cream as I read on a couple of reviews and did double up on the bacon because my husband loves bacon. I agree that gruyer is expensive, but if you look in the deli you can find a couple to choose from and the taste is so worth it and they always have small packages to choose from. I found some that was $9.99 a pound but it was wrapped in small packages so I got one for a little over $4.00 and I didn't use all of it.. I also had some smoked cheddar cheese in my fridge so I added that too.. As a matter of fact, each time I go to the store I always try to find the discounts on cheese. The delis usually always have those, so if you pick up one here and there it saves having to run to the store and paying full price. Then you can make this with whatever fancy cheese you have on hand too.
    I also used half sweet potatoes and regular potatoes and a whole wheat crust. Even with those few changes the torte was delicious and we are looking forward to having it with breakfast tomorrow. Thank You Melissa, you are a genius and I love watching your show, I hope to see you on the Food Network for a long time :

    Wow, this is an amazingly delicious dish. We had this for dinner tonight and my entire family agreed it was a hit.The crust is probably the best I've ever made.I pride myself on making a tender flakey crust but Melissa's is truly the best. I will be using hers from now on. Make sure the potato slices are nice and thin and they will cook up perfectly in the recommended 60 mins. Also I agree that you should use one cup of cream. We would like a little more bacon next time too. All in all I wouldn't change a thing the simple ingredients are what make it so great. Yummy, I'm so glad I made two now we have more for tomorrow!
