So good! Easy and flavorful. Light but still comforting. I used a very large jalapeño and used a whole can of low sodium chicken broth and used water for the remainder of the liquids needed. Didn't have bell peppers, so i used 1/2 a small can of fire roasted chilis. Going into my recipe box.

I used all chicken stock instead of water for more flavor and turned the heat off for the 20 minutes after it comes to a boil, but I loved the rice recipe! Simple and flavorful!
