My oven runs hot so this chicken was done in 1 hour 15mins- what a moist, delicious chicken. I didn't even do anything else & the gravy was just really tasty. This will be a keeper for future chicken nights!

This is a great meal! Tasty, satisfying, and fairly easy to make if one has plenty of time. My only complaint is that this meal exceeds $10, unless she means $10 per person. I don't even think I could make this dinner for two people for that price.

For one, the chicken I purchase is fresh and organic, but even purchasing the plain 'ole chicken in my local discount grocery store would make this meal well over $10. Not everyone has an herb garden in their backyard...or potatoes for the picking. By the time I purchased the chicken ($15, fresh herbs ($10, and potatoes ($5, not to mention the other ingredients, this meal cost us well over $50. I love Melissa's recipe, but the suggested cooking time is off and the $10 theme is a tad of an overstatement; therefore, I'm giving the recipe 4 stars! I would have gone lower, but I couldn't give it 3.5.

We have used the roasted potato recipe repeatedly. Outstanding with both red potatoes and with sweet potato but cook for less time with sweet potatoes.

I made this and it turned out great! Both the chicken and potatoes tasted great and weren't dry! Love it!

As with many of Ms. D'Arabian's recipes this is the only way I prepare roasted chicken (pot roast, fried potatoes, ... now. Very tasty and juicy.

Loved it!! My family devoured the entire dish. My only complaint is that I had to roast it nearly an hour longer. Anyway, will make it again!!

Absolutely wonderful dish! So tender and full of flavor, my whole family LOVED it! Will definitely make this dish many, many, many more times. The only thing I left out was the white wine and that was only because I didn't have any at the time. I just substituted with chicken stock and it was still an amazing dish. :

I am always looking for ways to spend less..so I am looking forward to watching her shows.

Finally tried her recipe....my family loved it!! I did read the other comments and adjusted my temp to the size of the chicken. I am making this for the second time in 3 weeks

I am making this recipe for the third time, as I write this. So far it has been a hit with my family. Juicy, tender, yummy. To those who's chicken wasn't cooked, perhaps your oven is like mine...it runs cool and I have to cook everything longer and use a meat thermometer. In this recipe she does not tell us how much pepper and salt to use...so that needs to be adjusted to add more flavor. I use my homegrown rosemary and lemon thyme and it has so far turned out fabulous! Tonight I am using a 7 lb chicken so I can have leftovers. I also use half sweet potatoes and half regular russet potatoes cubed under the chicken...I cannot wait to have a taste when it is finished cooking! Excellent recipe!

I loved this recipe! The chicken was among the most juicy and tender I have ever cooked - and very flavorful with the fresh herbs. I really like Melissa's style - lots of great tips for how to get the most out of simple foods. Keep it up!!!
