    This is the absolute best way to prepare tomatoes for freezing. No more blanching, peeling and seeding. I food process it into a smooth sauce for pasta, etc. The roasting adds a nice dimension of flavor to the sauce. I have shared this recipe with many friends and they all love it.

    I had a little of this left over and I added it to meatballs that I was making to go with pasta tonight. The meatballs also had grated carrots and diced bell pepper which gave it a crunch, but the tomatoes and onions gave an incredible sweetness to the meatballs that they were such a hit in this house and left them begging for more. The possibilities are endless with this.

    Couldn't rate this recipe five stars because the 2 tsp, of dried thyme is way too much, in my opinion. I used 1 tsp. and thought that was a bit over powering. I recommend using 1/2 tsp. Other than that, great taste. Plan to have it on pork chops and my husband suggested we use what's left tonight on rice tomorrow.

    We made this recipe and by accident we pureed the tomatoes too much so we made an AWSOME Tomato soup!!

    I'm reading a lot of comments about freezing this and Melissa made reference to the fact that it would last a long time in the freezer. My questions are:
    1. At what point in time do you freeze this? Before or after it goes into the food processor?
    2. After thawing for use, would you reheat this and serve warm?
    Hope those arent too silly, but Im just not sure and would love to try this out.
    Thanks for any help you can give.

    It's great to know what to do with produce on it's "way out." I love tomatoes and this was a very simple and flavorful dish. It's quick to prep and easy on the budget!

    This is such a versatile recipe. We used this with a simple pasta and steak dish and added just a taste of red wine. But the sauce is wonderful as is!

    This is so simple and soooo tasty! The entire family raved about it! I added beef and served it over pasta as a main course. And it was super cheap since I got a great deal on tomatoes at the farmer's market! I may have to make in batches and freeze so we can enjoy these flavors year round!

    I love Melissas recipes. I had to subsitute italian seasoning for the thyme and it was out of this world. We used it on our pasta as well. I love how she has such easy to make and follow recipes. I bought a ton of plum tomatoes at the farmers market for 49 cents a pound, made this twice so far. Definitly going to buy some more this weekend make a ton and freeze it!

    This is an awesome side! I could actually eat it as a meal...it is sooo good! We made this on our grill because we are in Arkansas and it's 100 degrees plus and it was amazing!
