Made this today and was really greatful for the opportunity to use garden tomatoes. They were overwhelming me. The flavor was wonderful. To use it fresh I will add Basil, but to freeze I will make the recipe as given.

Just finished a batch. Wished I had made more. I will get alot of tomatoes at the farmer's market this week and make alot of it. This would be great to freeze a few batches to have later. I also think it would be good on pasta. There are many possibilities.I left the thyme out and threw cilantro (I love cilantro at the end. Will make many times more.. Thanks Melissa. I really like your show and have it on Season Pass on TiVo.

This is worth every minute of the 2 hours required to roast the tomato, onion and garlic treasure. The flavor is fabulous! My tomatoes cost $1.79 for this recipe.
