    I used 2 small red potatoes because that is all that I had and I added 1 Tablespoon lemon pepper to the breading mixture. My husband is not a fan of salmon cakes at all, but he said these were really good. TWICE. The potato adds just the right layering and texture.

    I made the salmon cakes for dinner last night, and what a hit. Even my 23 year old son who isn't a big fish lover kept going back for more. I bought the wild Alaskan Salmon with no skin and bones, drained the liquid and they were perfect. I did make a sour cream, mayo and dill sauce to go over them, but it only made the cakes better. Who would have guessed there was bacon and potato in the cakes. Not only moist and delicious, but I have enough leftover that my husband claimed it for a sandwich today. Thanks, Melissa, good job. Keep them coming. By the way, I picked Melissa as a winner the first week of competition. A real mom cooking for a real family on a budget.

    I was so happy that Melissa won this year. Her recipes are down to earth and don't cost an arm and a leg to prepare. So what if they aren't original, who has time to look in all of the old books to find something different to fix. I watch FoodNetwork daily and love the shows, but sometimes the ingredients that they use are very expensive and not always available. If I didn't have to worry about the cost, there are alot of recipes that I would love to try. Melissa keep up the good work, love your show.

    A great way to use up fresh salmon, or else canned salmon/tuna. With the canned salmon, to get the calcium, you have to MASH and mix in the bones with the salmon. The bones are so soft, and when mashed in, you don't even know they are there. Even though I have a lot of old cookbooks, it's nice to see someone like Mellssa incorporate and remind us of recipes we may have forgotten about. And ,if you are a new cook, discover something new for your family.

    I made the salmon cakes for dinner last night and absolutely loved them. They were a big hit with my friend, her boyfriend and my husband. I was worried at first that they were not holding together but with some extra bread crumbs and better forming technique they turned out beautifully. Not a super quick meal by any means, but worth it. And the price to make this meal is great. I was a bit wary of using canned salmon, but agree that you can barely taste the difference. And I LOVE the potato addition.

    I was not Melissa's biggest fan during the competition but now I look forward to her every Sunday. Love her recipes and style.

    I enjoy this show very much. I tried for the first time the salmon cakes. They were so easy to prepare and such a wonderful texture and taste. Melissa makes it so easy.

    I was not a fan of Melissa's during the competition, but her show is terrific. The $10 meals are outstanding, especially for small families. I have tried many of her recipes and so far have been very happy with them. They are easy to prepare, not too time consuming, inexpensive and heatful. While her recipes may not be "NEW" or her own, I can only agree with some writers that MOST recipes are not new, and for the writer who found it in an old cookbook, many of us do not have your old cookbook and Melissa is reinventing and introducing some of these favorites on a budget. I love the Food Network and have made many recipes from several chefs. This is my first review only because of all the bad mounthing. Many of my attemps at some FTV recipes have not come out well, however, unless they were a complete disaster, I wouldn't write anything negative. These shows are entertaining and informative and most of the reviews are extremely helpful. I don't make a recipe anymore unless I read the reviews. Thank you to those who have helped me with their reviews, keep them coming.

    My husband and I really enjoyed the layers of flavors in the salmon cakes. I had never thought to add bacon or potatoes to them, so it was certainly an interesting take on an old favorite. I used a couple of small Yukon Gold potatoes instead of a Russet since that's what I happened to have in my pantry, but I don't think that I will use them next time. Flavor-wise they were good, but Yukon Golds are such a firm potato that they don't flake well and so I was very worried about my cakes falling apart because of all of the big hunks of potato I had. I used a gentle hand to make them and then used a long-handled basket-like utensil (I'm sure it has an official name, but I couldn't tell you what it is to put them into the oil. They stayed together, but next time I'll go get a Russet potato if I don't have one around already. For those of you who have never used canned salmon, do be forewarned that there will be bones in the can! Some skin, too. Be prepared to get your hands messy. Those bones are the reason for all of the calcium in canned salmon that Melissa mentioned during the episode.

    I forgot the Parmesan...but still tasted good. My wife and son liked them too. I still need some practice frying them up though. Not certain what those 0ne-star reviewer did wrong... to bad they didn't like it. Keep the recipes coming.

    I was skeptical when I saw Melissa making these but they sounded so bizarre that I couldn't resist - mayo, baked potato and salmon? My family scarfed these down like there was no tomorrow! They were delicious!! And they were super easy! These will be in my regular rotation.
