LOVE IT! So easy to substitute whatever vegetables are cheapest. I used butternut squash, asparagus, yellow squash, zucchini, sliced garlic, and mushrooms. Added roasted red pepper puree (buy on sale, roast, puree, and freeze in ice cube trays to the pan after the wine reduced a bit, and it thickened the sauce and added a great flavor boost. Thank you for a great go-to recipe!

it was an amazing recipe and the flavors of the meat come out well with the wine. i would cut the vegetables into smaller pieces and plate the dish in one bowl to get a better presentation. overall a great dish for a week-night.

My husband adored this. For me it was good. Next time I would roast the vegetables for 20 minutes instead of 30.

I used chicken sausage instead of pork. I used onions, red peppers and mushroom as the veggies, omitting the zucchini. This was a great meal.

This is the best recipe I have from the Food Network. I don't like mushrooms, so I just increased the other vegetables and added tricolor peppers and yellow squash in addition to the zucchini. I have made it for several people and everyone loved it. It's easy and when I make it at home, we eat some and freeze some. The frozen pasta is even better when reheated - the flavors really meld. I highly recommend this recipe.
