Delicious! I added a sprig of thyme when simmering the beans and served over creamy cheesy polenta with spears of roasted asparagus on the side. What a satisfying vegetarian meal.

This was, indeed, a tasty, non-meat recipe. Since I have a daughter-in-law who is vegan, I find this a great addition to my recipe file.

I'm always trying to find ways to incorporate beans in family recipes. They are so healthy, but not always welcome at the dinner table. This will be my new go-to way to get those beans into a menu. Thanks Melissa!!!

Home run, Melissa. Have to admit that I added an additional clove of garlic, a bit of red pepper flakes, and 1 1/2 teaspoons of fresh chopped rosemary. This will be a new "go-to" as a side dish and my family will undoubtedly get tired of it. Not me. Great with grilled chicken.

These beans were fantastic! I made them with the garlic spaghetti which as also great. The next night we added the beans to a chicken burrito. Thank you for the recipe it was wonderful and I look forward to trying some of your other recipes.

I left out the bell peppers because I don't like them. I also used shallots instead of onions (what I had at home and had to use navy beans because I couldn't fine cannellini at my store. It was still a very easy side dish to make and the family liked it.
