I could not believe my luck as I found the shrimp on clearance at my local grocery (had to be used today or tomorrow just like Melissa said in the store. I served this recipe today and my family loved it.

I had made some homemade pesto and couldn't think of what else I could do with it besides chicken and pasta. I used it with the shrimp and made shrimp tacos. Dinner was done in a flash and those shrimp were delicious!!! The flavor really did come through. YUM! I'd definitely make it again and maybe try the quinoa next time with it.

Every time I have questioned the $10 figure, people get huffy because I live in NYC. Well I feel much better now that a pro has run the numbers. I buy all my groceries from an on line grocer that delivers to my apartment the next day. Each week they list their Presidents picks which are discounted as much as 50%, I buy Wild American shrimp when it goes down to $10 per lb and freeze some in 1/2lb packs. I do the same thing with Diver scallops. As far as the eggplant goes, that was a big one that would be at least $1.50. My grocer's prices are at least 30% below my neighborhood stores.I think if people wish to be more budget savy they should watch Sandra's shows. And to the viewer who found the eggplant mushy, next time salt it well and put in a collander over a dish. You'll be amazed at how much water comes out. Just remember to rinse off the salt before you proceed.

Once again Melissa has come up with a delicious recipe! I made both the quinoa/lentil salad and the shrimp with cilantro pesto and it was love at first bite!. Serving the pesto on the side was a big hit on the fresh sliced tomatoes that I picked from the garden. The quinoa/lentil salad compimented the shrimp pesto beautifully. I might add a little more garlic to the pesto but other than that I wouldn't change a thing!

What an outstanding dish! Mrs. d'Arabian has served up another delicious recipe. This summer meal was both light and fresh! My family loved it. I look forward to serving this delicious pesto with other seafood options.
Thank you so much!

This was a very tasty pesto! I made it with walnuts because I didn't have pecans and it was Awesome! Can't wait to try it with pecans. I even used it on the leftover quinoa and lentil dish that was part of this show...YUM!!!!
Thanks, Melissa, keep them comming!! :

This recipe turned out well and we enjoyed it. However, it was too much work and made too many dishes for me to make it again. I made the quinoa and lentil salad from the same episode also.
