    I had my oldest son (adult...big over for lunch and made the Spanish Tortilla and the escarole salad for us. My son is a pretty good eater so I made the full recipes for four for just the two of us, figuring I could have some left overs for dinner. He enjoyed everything so much that I was lucky to get enough for lunch let alone any for dinner. He wanted the recipes and, believe me, that is a sign that the meal was a great success. I know exactly how he feels!

    This is a joke of a tortilla espa?ola. The green onions, cheddar, milk, and chorizo take away from the simple, authentic flavor of the dish. And boiling the potatoes? No way. They should be fried in olive oil. She'd have a much cheaper meal if she left out all the unnecessary ingredients!

    The receipe looks very tasty but I have never seen chorizo or salami or cheddar cheese in a Spanish toritlla. My wife is a born and raised Spaniard. We have been married over 40 years and she and her mother have made hundreds of tortillas for me in that time and they are always the same, sliced onion, thinly sliced potatos (sauteed with the onion, not boiled and eggs plus salt an pepper and nothing else. When we lived in Spain and I ate small slices of tortilla at tapas bar it was the same also, egg, potato, onion.

    I asked them about the sausage, etc in this recipe and they just said not in their family but to each his own.

    We will try this recipe but we will probably call it a frittata.
