    very good...I did what ramageki suggested but instead i used whole milk(no half and half in my home and it was great..just i little too sweet but good. next time 1/4 cup of sugar. thanks melissa and thanks ramageki.

    I have a butterscotch pudding recipe that is quite tasty... when it turns out. It is a time consuming and finicky recipe. So, in searching for an easier/more fool proof recipe, I decided to try this one and agree with others that it wasn't butterscotchy enough. (Real butterscotch pudding doesn't/shouldn't taste like the box kind by the way. So, made it again and made the following changes with GREAT success.

    1. Two heaping tablespoons of cornstarch
    2. Packed 1/2 cup DARK brown sugar plus a 2 extra tablespoons (you need darker brown sugar and plenty of it to make this more of a butterscotch flavor... and pudding is supposed to be sweet. Duh!
    3. 2 cups of half/half (no milk... pudding is supposed to be thick and creamy!
    4. Melt and brown TWO tablespoons of butter till you get a nice golden butter. Add browned butter with vanilla as directed. (THIS is the key to butterscotch. BROWN butter!
    5. Skip the cinnamon and cayenne

    This is a simple and easy recipe for pudding, no eggs?! Brilliant. I think the primary reason most are having the thickening problem is because you are not cooking it long enough. Cornstarch takes time and maybe rounded spoons of it can help. Happy to learn from others that this can be adapted to suit different flavor combinations. I will add cinammon extract instead of vanilla to commit this recipe more to a Cinammon Pudding, instead of butterscotch. Thanks, reviewers.

    I love everything this woman makes (well everything she makes without meat-I'm a vegetarian! Really good, but a tad sweet, next time I would use a 1/3 cup of sugar over 1/2 cup.
