We just loved this recipe, I didnt cut the beets smaller, because I think that;s the idea of the recipe, so the beets will give a little crunch and different texture.
I added 1 garlic clove with a sprig of thyme to the vegetables when they were roasting and then I added a splash of balsamic in the onions and bacon. topped the whole thing with small amount of crumbled feta. It was divine!!

Outstanding recipe! I only added extra bacon grease (1/2 tablespoon since I doubled recipe. This is a definite keeper.

This was fantastic! I may have overcooked the veggies a bit too much, but everything turned out great. And, I should say this is a pretty hefty side and I just ended up making it my main dish (and basically finished the whole batch. I will definitely be making this again.

This was fantastic, and quite rich; a little goes a long way (interesting that a prior reviewer gave it one star, but then said he wasn't satisfied with only 1/4 of the dish!. The beet did take longer to cook than the potato, so I may cut it smaller next time. I also diced up a garlic clove and tossed it in at the very end of the onion's sauté time, before adding the roasted veg. I doubled it to make sure I had leftovers, and added some extra bacon fat because, who doesn't want extra bacon-y goodness? Fantastic!

Made this dish last night for hubby and mom-in-law. I served it with Tilapia, as another reviewer suggested. I don't eat beets, sweet pots or fish... but they both said that dinner turned out great... but I wouldn't know. I used another reviewer's suggestion of dicing the beets smaller than the sweet pots. I used 1 medium sweet potato, 1 medium beet, 1/2 small onion, 2 strips of bacon, only had veg oil on hand, and did not add kosher salt due to medical issues, but it worked. It was enough for 2 people. I thought I ruined it because with such a small dice the veg got pretty crunchy, even before adding it to the bacon and onion... but mom-in-law said that's how it should be. Happy cooking!

Delicious....and I don't like pickled beets but I thought I'd give it a try. I cubed the beets slightly smaller than the sweet potato so they would "soften" more than the sweet potato during baking.
Healthy eating at its finest.
