A tip: wear rubber gloves when working with the beets. I made it for myself, a side dish to go with some tilapia. Wanted something that sounded healthy! I used one sweet potato and the beets I bought were small, so I used enough to equal the sweet potatoes. Good.

This was simple and pretty tasty. I used 3 small beets and a large sweet potato and it was more than enough for my family of 4 (just a little left over. It was nice to be able to make a dish with a twist that didn't require too many disparate ingredients.

This recipe is fantastic!! I have made this recipe for people who hate beets and they absolutely love this. Easy and impressive enough to serve at any dinner party. It's good cold, hot and at room temp. I will keep this recipe handy-it's a keeper.

This was such a deliciously beautiful side dish! I used three strips of bacon (removing some of the fat and loved it. It was my first time cooking with a fresh beet. Would definitely make it again.

Loved this recipe!!! Will be a repeat in my house. I like any kind of beets - hot: Harvard, Polish with dill and sour cream and soup, cold: salad and pickled but this was a great combo. And what doesn't taste better with bacon and onion? YUM.
