I loved it! It was very easy to make. It really reminded me of Thanksgiving. I might just make this warm fuzzy feeling dish for a change on Thanksgiving from the usual yams with marshmellows. I like that it was hearty, warm, colorful, flavorful and health!
I did find it to be a small serving for a famiy of 4 which is two kids and two adults. I might double or triple this when I make it again.

Wow! Love this recipe, except, I skipped the bacon & used a couple drops of Hickory smoke for flavor. I never liked beets or sweet potatoes, but now know that they're so healthy & this recipe rocks! Thanks so much! I'll make this again & again. We grow beets in the garden in Las Vegas.....

Melissa has such great recipes and this one is another great one. My husband wasn't so sure about Beets.....but he is a fan of beets now and we will fix this recipe again.

Easy to prepare and so good, great and unusual (for me who doesn't really like beets side dish. My family loved it, I doubled the recipe and it was all gone. Will make this again, very soon.

For the record, I *H*A*T*E* beets, but my hubby doesn't. I was skeptical of this recipe, but it sounded and looked good (in spite of the beets. So I cooked it tonight, and we had it with supper. It was really, really good! It might be the only way I'll eat beets, but at least I tried them. :

She has good ideas, my favorite was using the baking soda to remove beet stains on your hands. Not such a big fan about having to register to view recipe.
