    Yummy!! Couldn't figure out how to turn the triangles into ravioli bites and couldn't fit even a tsp. in the bites, BUT still turned out terrific. I didn't have yogurt so we used sour cream with a little honey. YUM!!!

    Melissa you are a GENIUS! My husband hates sweet potatoes and most vegetables, my children and I adore them. Now I am able to get my husband to eat them and enjoy them because of your ingenius recipes. Thank you! These are absolutely Delicious! I also used vanilla yogurt and only brushed the tops with butter the sprinkled with cinnamon sugar and they were Fantastic!

    Delicious! I had some trouble with the ready-made crescent roll dough... but it was my fault. I don't have very much counter space so I am either working on a cutting board on top of my stove-top or the 2ft of counter space over my dishwasher. Well with the oven pre-heating and the dishwasher running my dough got very warm, very fast and became such a pain to work with. I ended up with some very odd looking empanadas-- but they were delicious none-the-less. So-- next time I make these I will be using a chilled board to keep the dough cold enough to handle.

    Also-- and it may be due to my doughy-mess but this recipe seemed to make about a 1/2 cup too much filling-- which I saved and will be using with some left over bits of puff pastry. :-P

    It might be nice-- if there were ever to be a revision of this recipe if there was a recipe for the crescent-roll dough so those who wish to make it from scratch could-- and those who don't can just buy some pre-made dough.

    Phenomenal! I used vanilla yogurt instead of plain. Tangy and sweet...dont skip the yogurt. It really makes it. These were also so easy to make. Definitely a keeper!! I love everything of Melissa's i have tried. :o

    What a fun recipe! You can make this for breakfast, brunch, an appetizer or dessert. I made these for a superbowl party and everyone just loved them. Give it a try.

    my daughter and I love these empanadas! They taste like dessert nd have the vitamins of sweet potatoes. What more can you ask for?
