    Great flavor with very little ingredients. The tomatoes I got were not the best but you couldn't tell after they had been cooked. I also like that I can brown all the vegetables and stack in the dish. Then drizzle and cook later. Good do ahead recipe.

    As soon as I watched this episode I knew I had to try this recipe. I am an eggplant lover and I am always looking at different ways to prepare it. Took it to a friends dinner as a side dish and almost everyone loved it. I added some fresh pepper, 1 tsp. of basil and I minced and add the clove used to rub the bowl. Next time I would only do a fast light browning of the eggplant. Overall, I loved the dish and the different flavors it incorporates. Thank you Melissa, keep it up, I love your show.

    My daughter and I LOVE this recipe. I have lots of eggplant in the garden and we are getting tired of eggplant parmesan. This recipe is just what we needed...very easy and tasty! Thanks Melissa, for all the great recipes. You are one of our favorites!

    I'm tired of people being picky about the cost of the food on this show. You need to know where to shop. Nutella was available at Dollar General for under two dollars. Shop sales. Read ads. Freeze when you get a good sale. Check the markdowns. If you want to feed your family for ten dollars you need to put some effort into it. As for the recipe, it sounds delicious and I am going to make it. (But I am adding the garlic!

    I saw Melissa's show for the first time today & she prepared this recipe. I have never cooked eggplant before and have been wanting to try it, so I ran to the store & picked up the ingredients. Super simple!! I did make a couple of adjustments to the recipe. I didn't cook the eggplant all the way in the pan, because I heard it could get mushy. I just did a fast slight browning. Then I added a little minced garlic when layering. It turned out beautiful and delicious. Thanks Melissa! I will definitely make this again!!

    When I saw this recipe on TV I thought it would be an easier version of ratatouille. I was wrong. The recipe turned out really bland and I added extra garlic. The eggplant itself was mushy and the tomatoes and onion didn't do anything to help the dish itself. I threw out the leftovers and I hate to waste food. Needless to say, I will not make this again. All you eggplant lovers out there, stick with a good ratatouille recipe like Julia Child's.

    I love eggplant but it wasn't excellent it was ok. I didn't love it. I like the eggplant with the cheese. But I would never do it again.

    I will make this at least once a week as my eggplants just keeps giving and giving. I also take a few over to my local library and now I will take a copy of this recipe with the next bag so they can try it.

    I'm soooo glad that Melissa won and we are learning how to make French recipes the easy and thrifty way. THANK YOU Melissa.

    This was delicious and I served it with the quinoa lentil salad. To save time, I browned the eggplant and onion slices on an electric griddle. I used no-stick spray and a minimal amount of oil. Other than that, I followed the recipe exactly. Thank you Melissa for a great meal!
