These are so good. I like a little more spice, so I add more jalepenos and the seeds. I have not made the cranberry salsa.

I love the taquitos! So do my family : however, I like to pair them with the advacado salsa recipe, on the show for pork carnita bowls, especially after the holidays, and there's no cranberry leftovers : Melissa's recipes have revolutionized our dining experience, as well as our food budget! I'm so impressed with all the ways to make use of food, rather than waste.

I had a terrible time with this recipe... but I am still giving it five stars because even my utter wreck of a taquito tasted really good.
So what went wrong? The corn tortillas were dry right out of the package! And I just bought them-- I was so annoyed. They literally crumbled as I tried to roll them-- then after managing to hold a couple into shape with some creative tooth-picking they dissolved in the hot oil. Insane mess... melted cheese loosed in a vat of sizzling oil. *sigh* I only managed one decent taquito...
I gave up on the whole lovely-looking rolled taquito and opted for an un-folded quesadilla looking thing. Flat tortilla, fill with turkey mixture, flatten and top with another flat tortilla then very shallow fry... the tortillas still attempted to dissolve in the oil-- but not as badly.

These were easy and quick to make and I had no problem with my corn tortillas cracking. My family scarfed them down!

The cranberry salsa was amazing!! I didn't use a food processor to blend the ingredients, instead, I left it somewhat chunky and it was delicious and super flavorful. The taquitos were time consuming but so worth it to use the left over turkey that no one wants to eat on day 3! I see reviews to warm the tortillas in the microwave, fry them, or bake them; but what I did instead was placed two of them at a time in a warm pan and flipped them after a minute or so on each side and that worked excellent!! Plus, to me seems much quicker and they were very pliable. Anyhow, I love Melissa D'Arabian and my family and I make one of her recipes each week. She hold true to her statement, "you can feed your family a great meal for not a lot of money" I was able to feed myself, my husband and our two children. She has realistic portions that will leave you satisfied and full!

These taquitos made turkey leftovers worth eating! They were crispy and light and the salsa was fantastic. Will definately make again!

My family loved these. They were easy to make after warming up the tortillas in the microwave with a damp cloth. Might add a little more cheese next time.

the craberry salsa was out of this world and very simple to make!!
had trouble with the corn torillas, all were cracking while rolling, was able to salvage three... should have read the suggestions to heat before rolling or would have preferred Melissa to give in instructions.... ended up using flour tortillas and baking!! Will know next time!!

Very good. the cranberry salsa makes the dish! Quick tip; spray the tortillas with non stick spray and bake at 275F for 5 minutes to soften. They'll roll with breaking.
