the craberry salsa was out of this world and very simple to make!!
had trouble with the corn torillas, all were cracking while rolling, was able to salvage three... should have read the suggestions to heat before rolling or would have preferred Melissa to give in instructions.... ended up using flour tortillas and baking!! Will know next time!!

Very good. the cranberry salsa makes the dish! Quick tip; spray the tortillas with non stick spray and bake at 275F for 5 minutes to soften. They'll roll with breaking.

Delicious! Time consuming, but they are taquitos. Well worth it. My whole family loved them. I used shredded chicken instead of turkey. I didn't make the cranberry salsa, and served with refried beans and spanish rice. Great recipe!

Was very good, put the tortillas between a couple plates and microwave for about 60 seconds to steam and soften them then filled and rolled. placed seam side down and fried that side first to seal it so I didn't have to use any toothpicks. The store didn't have any green bell pepper so I subbed and Anaheim chili. Worked great. Will make it again for sure.

Goodbye leftover turkey sandwiches! This recipe is such a great way to use up all those Thanksgiving leftovers. I actually didn't make the taquitos - I just made the filling and had turkey tacos, because I didn't want to fry them. The filling was fantastic! I added a couple tablespoons of tomato sauce to give it a little more sauciness. Normally, I cannot stand a taco that doesn't have cheese and sour cream. The flavors here are so great that I don't want either of them! Now that's saying something.

The cranberry salsa has a great flavor that exceeded my expectations. The jalapeno adds a great spice to it, and I love what the lime juice adds. I also think it's great that she divided the onion and the stewed tomatoes up between the two recipes. It's always a pain to have half a can of something lying around.

    Thank you so much, Melissa!

I liked these very much! I fried the tortillas in oil for a minute first to make them pliable. I might try another viewer's suggestion to bake them next time, to be a little healthier.
It's a great way to use up leftover turkey. I'll be sure to remember this recipe to use up any sort of leftover meat!

I fry the tortillas first for a few seconds to soften them and then fill and fry them till crisp. For a lower fat version I don't fry at all-I spray the tortillas with Pam and put them on a cookie sheet in a 425 oven for a few minutes to soften then fill, spritz with Pam and bake till crisp.

The only reason that I gave this recipe four stars and not five is because it gave me an absolute heart attack while making it! Yes, as others have commented, it is very, very heart-rending to see you beautiful taquitos seemingly fall apart, but even as you put them somewhat broken into the hot oil, it just somehow WORKS. I'm not an experienced cook with corn tortillas, and I might ask around how best to warm them up-- I'm not sure this is the best way.
But DARN, those taquitos taste delicious! We used our own salsa, as we didn't have any leftover cranberries.
