    This is a very simple and tasty recipe. We had it with her meatloaf recipe for dinner this week (also a very good recipe.
    I kept the potatoe skins and a few nights later I took the leftover mashed potatoe spread it back into the potatoe skins, topped with crumbled crispy bacon, sprinkled leftover irish cheddar cheese.
    Baked them till warmed thru and cheese melted, topped with a dollop of sour cream and a few chopped green onion bits....served with flank steak sandwiches. My husband and 2 sons loved it.

    This potato recipe was easy and Delicious!!!! Leftovers heated up well the next day. Actually, they may have been even better the next day. So much flavor!!! Thanks Melissa. Love your recipes.

    Very easy to make just takes a little time. Very nice change to my traditional sunday mashed potatoes. Will defintely be making again.

    Melissa...thank you, for sharing this delicious recipe...after trying this one...well...Mother knows best...your mom's recipe is the best. I also want to mention that don't discard the potato skins...I used them as appetizer, potato skins with olive oil, cheese, bacon, chives, sour cream and olives...makes yummy appetizers...just bake for 20 minutes in oven making sure cheese melts...of course, I add the sour cream, chives and olives before serving. You can also add anything you like like salsa, too.

    Wonderful! Not mashed potates and not scalloped potatoes. Perfect in between and very easy! The only time issue is the baking, but you could just as easy microwave the potatoes for a bit. Didn't have green onions so I used regular yellow onion. Might add a bit of garlic next time too!

    OMG!!! This was so easy to make, perfect side dish for one of those days that you just have a lot of time in your hands. Taste is very good as well, I also added bacon in this dish... Thanks.
