I made the eggs for Lunch today and they were so yummy. I love soft scramble eggs and adding the squeeze of lemon brings the dish together. Thanks Melissa for a great recipe. I like your idea of cheap protein nights using eggs, green salad and maybe some french bread for dinner.

This recipe and meal idea are perfection, I have never in my life had better eggs, and with a wonderful salad! Who Knew????? Not a thing should be substituted or changed, it is PERFECT!!!!! Side note, the recipe should include the suggestion to squirt lemon juice on the eggs, OOOOOHHH SOOO GOOOOOD. Melissa did it on the episode, thought it was weird. Glad trusted her taste buds

I would never have thought of eating scrambled eggs with a green salad for dinner, but this was one of the best meals I have had in a long time! The eggs were so creamy and the vinegrette salad dressing was so easy to make and added just the right acidity to balance the richness of the eggs. Plus the whole thing took 10 minutes to make. Now if I can only get my husband to try it...

Made this egg dish with salad for Sunday brunch, followed recipe exactly and the eggs were fantastic! Creamy, flavorful just the right amount of herbs and I used heavy cream to stop the cooking process on the eggs. The salad dressing was delicious and did not over dress the salad or overpower the eggs. You must try squeezing a fresh lemon wedge over the scrambled eggs it is amazing and helps cut the richness of the creamy "yummy" herb goodness...I can't wait to make it again!

Very good! I did not have the specific fresh herbs used in the recipe so I just used what I had. Still turned out delicious and very silky, great method!
