    Made your Weekday Cassoulet and it was so easy and tasty. My husband and I just loved it! You have some wonderful recipes. We enjoy your show and your bubbly personality too!

    I loved everything about this dish! It was yummy not too difficult, if I have any complaint it is that we had NO LEFT OVERS! I really enjoy her show almost more than anyone right now because it doesn't cost a fortune or a drive to a bigger city to get the ingredients! Yea Melissa, keep it up!

    My husband and I both loved the taste of this dish. I used bacon instead of the salt pork and had to add some olive oil but it was not greasy. The leftovers are in a small casserole and frozen for another quick meal. Cooking the white beans with the onions and then deglazing with wine really put the flavor into the dish.

    I made this last night. I followed the directions exactly and the only substitution I made was that I used center cut bacon instead of slab bacon. We sat down to dinner and cut into the delicious smelling meal....and the chicken was nowhere near done! So we went o McDonalds....LOL! However, I threw it all in the crock pot today and slowly finished it. The smell was incredible and the taste is fabulous. I did cook some brown rice on the side and added it to the crock pot with everything else. It was wonderful. My kids and husband loved it, too! My only complaint is that it WAS greasy. I didn't go into it thinking it was a "healthy" meal. It did call for bacon and skin on chicken! But it was a little overly greasy. I will use skinless thighs next time. Otherwise, an A+ recipe. Make sure you either cook your chicken longer when you are browning it or be prepared for this to take a little longer.

    I made this recipe for dinner last night. It was absolutely wonderful. The chicken was so tender and the beans were so full of flavor. Very difficult to achieve in so short a time. We are generally very picky about what recipes are added to our everyday recipe file... this one is definitely one that we will make again and again.

    PS. I didn't find it greasy at all. I used a good quality thick sliced bacon and there was just enough to brown the chicken. I think most of the fat in the dish actually comes from the chicken thighs. Use an organic raised chicken and trim any obvious fat off and you should be fine.

    My entire family of 5 loved this dish! Especially my husband...he couldn't get enough and thoroughly enjoyed the leftovers. My grocery store did not sell slab bacon so I substitued thick cut bacon instead. It worked just fine. The one modification that I will make from now on is to drain most of the grease from the pan after browning the chicken thighs and before cooking the vegetables. My gut told me to do it, but since this was my first time making this recipe, I followed the instructions. The end result was delicious, but much too greasy. With that being said, this recipe will definitely become a staple in our home!

    Delicious, easy to prepare; a really nice and tasty meal. We love all of Melissa's recipes, and we love watching her show on Sunday mornings. Since we go to church we simply record it for later viewing....W & C Gresham, Oregon

    We like Melissa d'Arabian a lot and have enjoyed most of her recipes however this one was too greasy. We could not find the kind of bacon that Melissa recommended so we used Smithfield extra thick ... .. maybe this was the problem. I will try to make again but not leave so much bacon grease in the pan. We also did not like the bone in thighs and will use boneless next time.
