    All I can say is WOW! I made this last weekend when my son and his collage friends came over and it was a big hit. I've been wanting to try a good baked mac & cheese dish and this is it. I did not put in the peas, and instead of using all milk, I used 1/3 heavy cream, and added a pepper, also used Toni's instead of Essence, it was fantastic.

    Very good! I couldn't find my go-to M&C recipe, so I found this (which is very similar. I made some changes: I used salted butter and omitted the tsp. salt (something I often do with Emeril's recipes. I put 2.5 c. (instead of 2 c. of the shredded cheddar in with the pasta (I used shells and I put the remaining 1/2 c. (instead of 1 c. of shredded cheddar with the Essence and breadcrumbs. I omitted the ham and peas though I'm sure it would be delicious with those in there. I was just going for the classic M&C that we love (and couldn't locate the recipe to.

    I love making this mac and cheese! My son loves it and trust me when I say he is a picky eater! Easy to follow recipe, I would recommend it to anyone.

    I gave up eating mac and cheese along time ago cuz it sucks. Then all these chefs started showing how to make it the right way. I made a double batch of this recipe: one for my husband's office pot luck, and another for my house. Good stuff. I left out the peas, although I liked peas, I thought the construction guys at my husband's office would think it was wierd.
    I used super sharp longhorn cheddar and about a cup-ish of smoked gruyer. And we all know, don't we, that we must grate our own cheese, it's much, much better tasting! I added about 1.5 cups of good smoked ham too. I also threw in about a teaspoon of dried mustard for some tang.
    It was lovely, and creamy and satisfying. I used panko with the cheese and of course, way more emeril seasoning.
    I'll feel proud when my husband takes this to work tomorrow.
    And, by the way, I told him NOT to tell them this in an Emeril recipe, so I can take all the credit!!

    My husband had told me of a childhood dish his mother made that was similar to mac and cheese but with ham and breadcrumbs. Sadly his mother was deceased before I met him, so I was never able to ask for a recipe. This Easter I served ham and had leftovers, so I set out trying to find a recipe similar to what he remembered as a favorite childhood dish. I decided on this recipe. It was delish and my husband said it was everything he remembered as a kid. He was thrilled with dinner. I followed the recipe as stated, with the exception of adding more ham. About 1 cup total. The recipe was easy to make and very tasty. It is definitely a keeper and I scored 'happy' points with husband. Thank you Emeril for publishing this recipe. It brought back wonderful childhood memories for my husband.

    This is the BEST Mac and Cheese ever! I was looking for a recipe to use my leftover home grown, home smoked ham. This did it proud. The cheese sauce was just right and the cheese and panko toping was out of this world. Got compliments from everyone that tried it. I will be making this again!

    I have made this 3 or 4 times and every time I do something different ie: whole milk/skim milk, sharp cheddar or sharp/jack combo, with or without ham and everytime its delicious.

    I just made this for the first time. Working with what I had in the kitchen... I added roasted garlic and shallots to the ham mixture, replaced the whole milk with skim and used a blend of cheeses (that you buy at the store in the bag. I will definitely make this again.

    This recipe was Super easy to follow...a little too easy sometimes! Our family really likes the ham pieces, it gives the dish a really good flavor throughout. It's one of our favorites, no doubt!
