Mesclun Salad with Stilton and Toasted Walnuts

Ingredients
  • 1/4 cup sherry vinegar
  • 2 tablespoons minced shallots
  • Salt, pepper to taste
  • 1/2 cup canola oil
  • 1/4 cup walnut oil
  • 1 pound mesclun salad
  • 1 cup toasted walnuts
  • Stilton cheese
Directions

Whisk together vinegar, shallots, salt and pepper. In a slow stream add the oils. Set aside. Toss together greens, walnuts and dressing. Serve with Stilton cheese.
