    This has become one of our favorite dishes! I don't do anything different with the stew (sometimes I leave out the ancho chile, it tastes the same( but for the sweet potatoes, I do leave out the peppers and adobo sauce. I tried it once, but it's a little too spicy for me. My husband would have me make this every night of the week, but we usually just have it once...sometimes twice.

    Fabulous. I made this for a crowd of 30 last night. It was really good and everyone loved it. It came out a little hotter than I would have preferred for a crowd but the sweet potatos(I left out the chipotle here toned it down. I had made plain noodles for the little kids and some of the adults added that to their stew. Only change was I used pork butt that I cut up, and added two onions. When making 4 times the amount, my quantities of the canned ingredients was more an estimate....I used a bag of those small colorful peppers, then some large red and green- it was colorful. There are leftovers but not tons....

    LOVE THIS!!! I am not sure why so many people changed the recipe. You don't need to. It is so good just the way it is! The flavors are perfect together. I make this about once a month for my husband and I. I just made it this past weekend and tripled the recipe for just the two of us. We love to eat it as left overs for as long as possible!

    Doubled everything except the beef. Used two pounds of pork loin I cubed up. Also used red onion, and 7 fresh bell peppers.

    What a great combination of flavors. I did add onion, two medium yellow, and a large can of crushed tomatoes. When cooking in a pressure cooker, I cooked the meat with spices and beef broth until pressure went off. I then added the vegetables and stopped cooking when cooker went off again. It came out delicious and the flour mixture made a thick gravy.

    The most incredible beef stew I've made. My tongue is still tingling because I may have inadvertantly quadrupled the chipolte. When a recipe calls for chipolte in adobe I puree the contents of the can and freeze the extra. I killed the last of the latest puree in this. Serving it on sweet potatoes is ingenious and delicious; a superb blend of spicy and sweet.

    Absolutely fab, and to save kcals I made Turkey Albondigas as my protein. The flavors meshed beautifully. The stew with protein could have been its own meal, while the sweet mashed potatoes can be a wonderful side dish to a variety of other entrees.

    My wife does not like spicy foods, so I cut back on the spices. We both really like the dish. I will definetly make this again.

    Made this exactly as the recipe called for except used the white long potatoes which are in the yam family. This whole meal was a huge hit with my family and guests. It is definitely worth trying!! I also added several toppings for the stew that people could choose from.
