Mexican Fiesta Dip

Ingredients
  • 1 medium to large can refried beans
  • 3 avocados, chopped
  • 2 teaspoons lemon juice
  • Salt, pepper, to taste
  • 1 large container sour cream
  • 1 chipotle in adobo, chopped
  • 1 bunch green onions, chopped
  • 2 large tomatoes, seeded and chopped
  • 1 to 2 cans sliced black olives
  • 6 ounces grated cheddar cheese for garnish
  • 1 package tortilla chips
Directions

Take a large platter and spread out a layer of refried beans on the bottom. Combine the avocados, lemon juice, salt and pepper and spread the mixture on top of the beans. Combine the sour cream and chipotle. Spread that mixture on top of the avocado mixture. Chop and combine the green onions, tomatoes and olives. Spread the mixture in a ring around the outside of the platter. Garnish the top with cheddar cheese and serve with tortilla chips.

    This is the best mexican layer dip!! I make it for parties all the time and people always LOVE it. The smokey flavor from the chipotle in adobe sauce is wonderful! (I use 1/2 of a 7.5 oz can with some of the sauce blended in the sour cream I sub refried black beans for regular refried beans. I leave off the cheese and black olives (I don't like the flavor of black olives and I don't miss the cheese or the calories from the cheese I also slice fresh Jalapenos on the side for people who like a bit more heat.
    Used store- bought guacamole & doctored up with other ingredients
     
    Turned out well & was easy
    I made this dip for a party and it was a hit. So easy and makes tons. I split it into 2 plates and took the second to work where it was devoured. I made it with all fat free products (except the avacados) and added a minced jalapeno to the beans for a little extra kick. This is a very simple recipe and good to boot.
    Super Bowl Sunday I made this dip and one other. Each dip went to different parties. This plate came back clean! It takes 15 minutes to put together, no cooking, and you are a star. EVERYONE loves this dish. I recommend you taste the sourcream mixture to make sure it is hot enough for you. One chile doesn't give us enough kick. This is a great travel item. Enjoy!
