i'd been craving mexican rice and i saw this. pretty good. i had to add more red sauce and chicken broth about 1/2 through baking it. but all in all it made a lot and im happy!

I liked this recipe.... I omitted the tomato juice, I thought that it would over power the fresh Vegs in this dish.
