This was a wonderful and easy salad to make. Be careful with the Mustard. It can become bitter very easily. Taste a half spoonful first before adding the rest. I also suggest warming the vinagrette before adding to greens. It really makes it delish!!!!

While I would certainly make this again,I would use much less mustard, perhaps 1/2. It was too tart/tangy. I didn't want to hide the lovely mellow egg and ham taste. The poached eggs took no time at all which makes this ideal for entertaining. Be aware Italian ham is tres expensive..the taste is great though and worth the occassional splurge
