THIS is the michael chiarello squash and apple soup recipe I meant to review. It's fantastic, and to kick it in the pants even more- add some creme fraiche and chunks of dungeness crab meat. yum.
And the toasted fennel spice rub is my go-to spice! I slip it into everything from roasted meats to sweets!

It was a little time consuming making this recipe, but definitely worth it in the end. We had it as our first course for thanksgiving dinner and it was a hit all around.
Can't get enough of the walnuts either. I'm making another batch tonight. Its a nice treat to snack on!

This soup wasn't what I thought it would be. It didn't have a "coutry italian" taste like it was proported to have. The apple taste is almost nonexistant.

I made this last year on Thanksgiving and it was a hit! I replaced the walnuts with pecans for allergy purposes and I think it worked out perfectly. The soup was the only thing everyone ate every drop of. This is definitely a tradition from now on in my house!

I made this for Thanksgiving 2006. My entire family simply found it too sweet rather than savory. It was good...but definitely not worth the effort. I'll stick with butternut squash soups withOUT the apples.

This is a great looking, great tasting soup, and versatile as well. If time constrained you can skip the candied walnuts and even improvise on the spice mix without the time for toasting whole seeds and the flavor and spice/heat still come through to give this hearty soup a wonderful aroma and taste. The first soup I've made other than chowders and chilis and it was a breeze.

This was wonderful!! Everyone Loved it. This is a keeper and with winter on its way this is a perfect soup for anytime, lunch, dinner, snack, when ever you want it. I made it two days before I needed it and that only added to the flavors. Thank you Michael for sharing!!!!!!!!!!
