    In my endeavor to satisfy my palate with the aromatic and wonderful flavors of autumn, I set out to try a new recipe for Butternut Squash Soup. To put it simply, this one is heavenly. It is truly better than any variety of squash soup that I've had in hoity-toity restaurants! Try it, you LOVE it!

    This was good, a little messy though. It turned everything orange. It is good with a little sprinkle of cinnamon sugar and a pat of butter!

    I saw Michael make the soup and I realized that I had frozen butternut Squash and apples available. I had another recipe but it didn't have the apples in it so I used Michael's recipe. I made the soup tonight and my husband and I loved it. I deviated from the spices as I didn't have all the ingredients so I used pepper, salt, red pepper flakes and cinammon and it was delicious.

    This was so good. Like a couple of others, I did not make the spice mixture. I just added 1 teaspoon of cinnamon and and 1/2 teaspoon of curry.

    .... I love soup!!

    This is so worth the chopping and puree process.

    I've made this as a 'trial run' before Christmas, then served it at 2 separate Christmas dinners to people who "arent'" soup people and they LOVE it too!!!!

    Complex flavors in an earthy soup. Warms the soul. I didn't make the walnuts this time and instead used a dollop of creme fraiche. Some fruit and cheese would be great with this but I ate two bowls of soup instead.

    This is one of the best soups I have had in my entire life!!! However, I replaced the rub recipe for a teaspoon of cinnamon and half a teaspoon of all-spice, and it turned out easier and even better than the original recipe!!! I know that if I serve this for Thanksgiving, it will be a major hit... Thanks Michael!!!

    My husband insists we serve this soup to his staff as an appetizer for one of our dinners. With Michael's spice rub, the soup has an unforgettable, homey flavor. Absolutely delicious!

    The soup was easy enough to make. Even the toasted spices for the soup were easy enough. However, the garnish of walnuts was a pain to make and added nothing to the flavor of the soup. Simple crouton would have been just fine.
