This recipe is so incredibly easy. The flavor is always packed in each bite, and each time is wonderfully moist.
Best whole roast chicken recipe I've found thus far, hands down.

2 chickens for 4 persons???
Also the reviews talk about a vertical roaster, this is not mentioned in recipe. I did not watch this on TV, I want to prepare it. Could someone enlighthen me.

Oh my gosh, I made this dish very last minute and it came out so perfectly. I made it for my valentine's dinner and the meat was just falling off the bone! It couldn't have came out any more perfect! Even my kids loved it. And my son is a very picky eater! Super duper easy recipe. The only thing I changed was instead of buying 2 different chickens of about 2 pounds each I just bought a big chicken weighing about 4 pounds. Gotta try it! I already recommended it to everyone at my work! Thank you thank you thank you!

This dish could not be more simple. The flavors went well together & the chicken was very moist. Highly recommend especially if you're short for prep time.

This was a real crowd pleaser for our sunday night girls' dinner party! The only thing was that I couldn't find the conical ceramic dish he used in time for the party, so I just used a regular roasting dish- still great though!

Baking a whole chicken on upright holder really helps with time. Seasoning is just right - chicken is moist and flavorful. Will see my table many more times. Thank you for another great tip.

I ended up using the rosemary/lemon salt with a cornish game hen. Did not have a vertical rack, so instead, used a soda can to prop up the cornish game hen. The meat was quite tasty.
I also surrounded my chicken and can with lots of veggies (zucchini, squash, onion and carrots, but I did not have the fennel spice rub on hand. Instead I tossed the chopped veggies with some olive oil, salt, pepper and herbes de provence.
The kitchen smelled great while cooking. The end product was a tasty chicken with roasted veggies. I look forward to making this again with the fennel spice rub.
