I make risotto fairly regularly and was thrilled to see i could make a rice pudding this way BUT I ran out of liquid way before the rice as al dente, infact it was only half cooked. I heated more milk and added it but it just didnt seen to absorb right. I wouldnt bother again. Shame really, I wish it had been as easy as a savory risotto. : (

I love chocolate pudding and love risotto, so when I heard Michael doing this recipe the other day my ears perked up! I made it last night and it was wonderful!

I did have to make a few adjustments though, it took almost 40 minutes to get to the right al dente consistency for me and after removing the pudding from the heat and prior to adding the chocolate, I added three egg yolks - beat first and temper by slowly adding some of the risotto to the yolks while stirring them, then they can go into the pudding without cooking them. I just like a more eggy pudding and this worked like a charm. I also added a splash of Grand Marnier at that point, since chocolate and orange are also a favorite pair.

Family LOVED it, will make many more times, thanks Michael!
