    This has become a family favorite and is requested by my family when they get to choose their birthday supper. The dressing is absolutely amazing!

    I agree the dressing is fantastic but I noticed some reviewers mentioned chewy pancetta or using bacon over pancetta. This recipe calls for procuitto which is very crisp when cooked and less fat. Try PROCUITTO there's a big difference.

    This was too good for words. I ate it just as a salad and my husband ate it on the bread. I am a chef and almost never like recipes, but this was awesome!

    I only made the Blue Cheese dressing...it was excellent the first night but even cut in half made an enormous amount. After just one night in the fridge it was very runny and all you could taste was the onions.

    I didn't make the cobb salad wrap, just the blue cheese dressing to go with a different recipe, it is SO good. Just chopped the onion and carmelized in the pan, followed the rest exactly. Highly recommend.

    Very easy and tastefull. Exact amount of each ingredient, that you can actually taste them all. I thouhgt maybe the dressing would be too strong because the blue cheese, but not. It's a very elegant dressing. My 2-year old baby girl loved it!!!

    Everyone in the family loved it and it would be easy to adapt to whatever is in the fridge. Bacon instead of Pancetta, left over pork loin, fresh spinach instead of arugula etc.

    I agree that the dressing was good but I thought the wrap was even better with a nice Italian red wine vinegar and oil dressing. Also the procuitto gets a bit chewy when cooked that long so I think bacon would be better. Otherwise really yummy, will make again!
