    We made this recipe for Thanksgiving last year and it was requested by our hostess again for this year. It was a huge hit. Tasted light and so fresh. Making your own Onion Strings was so easy and the effort was well worth it. Salute'

    " I have news for everyone...you CANNOT cook green beens in 3 to 4 minutes. All you are doing is breaking the wax coating... and eating them raw. I see this all the time on food network...it causes the green beans to have a bitter, raw taste that is terrible. People that live in the south have a good laugh everytime we see that. "


    ^^^^wrong, i just cooked my fresh green beans in 3 and a half minutes, blanching them. dont over cook them!!!

    No more overcooked glop from this kitchen. This was so enjoyable and fresh tasting. Got rave reveiws from my Sunday dinner guests and will be my offering at our pot lock Thanksgiving family dinner. One tip: I did not fry the onions, but instead used jarred fried crispy red onions from my asian store. They are probably not as good as Michael's onions, but far superior and cheaper than the canned supermarket version.

    Love Michael's green bean casserole. So much lighter and fresher than the usual goopy soup laden green bean dish always served at Thanksgiving. Thank you for a great alternative!

    One of the worst things about the old mushroom soup recipe is that the beans end up over cooked. Michael's recipe blanches the beans. One they are brought up to boiling, they continue to cook internally on their own unless you shock them with cold water. This is the way green beans should be cooked. It gives them a nice texture and color and helps preserve the vitamin content.
